JG: Our first introduction (thank you, Angelo) to Venetian Polenta biscotti was soft, very delicious, lemony confection. We searched and searched for a VP biscotti that was similar in bite to the other biscotti on our menu but eventually had to revert to concocting our own. We took all of the flavor elements of the soft cookie recipe Ange began with and turned it into our own version. We l-o-v-e this biscotto.
